Chicken Wings Rule the Roost in U.S. Restaurants

Foodie fans of the chicken wing may not believe it, but it wasn’t that long ago that chicken wings were considered nothing more than a kitchen scrap. If one of the popular origin stories is to be believed, the chicken wing got its start at the Anchor Bar in Buffalo, New York after the bar received an accidental shipment of wing segments and the owners decided to toss the wings in hot sauce, butter, and vinegar. While the truth behind this particular story is sometimes debated, one thing is clear: the chicken wing has become a culinary sensation in the United States.

Around 28 billion chicken wing segments are consumed in the U.S. every year, according to the National Chicken Council.

As consumer demand for chicken wings continues to grow, the foodservice supply chain is influenced – and it’s not just poultry producers feeling the pull. Equipment manufacturers and other ingredient suppliers are also brought into the mix.

According to data from CHD Expert’s Easy2FIND foodservice database, there were more than 3,200 restaurants in the United States dedicated primarily to chicken wings as of January 2017. Within the Limited Service Restaurant segment for chicken wing restaurants, 83% were classified as Fast Casual restaurants. (By definition, LSRs require customers to pay at a counter before being served food.)
