A Sweet Treat: CHD Expert Evaluates the Bakeries/Donuts/Snacks Menu Type in the USA

Americans love to celebrate things like National Donut Day, National Bagel Day, National Candy Month, National Cream Puff Day and a variety of other delicious-sounding food themed holidays. As an homage to America’s love of all things sweet, CHD Expert has recently examined our data around the Bakeries/Donuts/Snacks Menu Type. Here’s what we found:

As of October 2017, there are more than 26,300 restaurants with the Bakeries/Donuts/Snacks Menu Type in the United States, according to CHD Expert’s foodservice database. The majority of establishments within this landscape fall within the Limited Service Restaurant (LSR) segment, with customers typically paying and ordering at a counter before receiving food. Table service is provided at Full Service Restaurants (FSRs) and the bill is paid after food has been served.

Regarding the combined LSR and FSR landscape for the Bakeries/Donuts/Snacks menu type, Quick Service establishments account for 75% of the market, Fast Casual for 19%, and Family-style for 6%.

Within this landscape, the seven sub-menu types that make up the Bakeries/Donuts/Snacks market are Bakery café (43%), Pastry & cakes (5%), Bagels (10%), Pretzels (6%), Donuts (27%), Snacks (6%), and Snacks Menu unclassified (2%).

Independents make up the majority of the Bakeries/Donuts/Snacks landscape at 67%. (CHD Expert defines an independent as a foodservice establishment with fewer than 10 units.) Further regarding the landscape of independents and chains, 13% of the Bakeries/Donuts/Snacks landscape is made up of chains with 501+ units in operation. The top five chains for the Bakeries/Donuts/Snacks menu type (in terms of number of units and their market share) are Panera Bread (21.06%), Auntie Anne’s (11.28%), Einstein Bros. Bagels (8.3%), Cinnabon (6.05%), and Daylight Donuts (4.25%).

The average check at 65% of Bakeries/Donuts/Snacks establishments is between $7-$10 and between $5-$7 at 21% of locations. When looking at annual sales, 65% of establishments within the Bakeries/Donuts/Snacks Menu Type report revenues of less than $500,000, 21% report annual sales of $500K – $1M, and 12% report annual sales of $1M – $2.5M.

Drilling down to the state level, states with the highest percentage of independent FSRs as a percentage of the state’s total restaurants are Mississippi (6.10%), Texas (5.70%), New Jersey (4.88%), Oklahoma (4.75%), and Washington & DC (4.65%).

When considering the longevity of each segment within the Bakeries/Donuts/Snacks industry, 53% of Full Service restaurants of this menu type have been in business for 5+ years. Limited Service Bakeries/Donuts/Snacks restaurants show similar numbers, with 55% being open for 5+ years.

The Bakeries/Donuts/Snacks menu type isn’t the only segment that allows American diners to indulge their sweet tooth. There are more than 21,400 Frozen Dessert restaurants in the United States as of October 2017, according to CHD Expert’s database – and 100% of these establishments are classified as Limited Service.
